Strawberry tiramisu

Can’t think of a dessert that could be more suitable for the occasion than a delicious strawberry tiramisu.

Holy Week has always had the power to draw so many intense feelings and thoughts. At least that’s the way I feel. Ever since I was child I felt so overwhelmed with emotion during these days. From back when I used to follow my grandmother to church and held onto her skirt without really understanding what’s happening to this day, Holy Week deeply affects me in such a strong and definitive way. It’s this feeling of grief and joy at the same time.

These days, I feel the need to get closer to what I believe in, stay quiet and listen, be more aware, pray.. See hope through the light of a candle, keep all my loved ones near me, tell them how much they mean to me, apologise even.. Fill my soul with hope and light.

Spring days can be warm or somewhat colder at times, as clouds and short rainfalls constantly take turns with sunshine. Our days rapidly change from bright and sunny to gloomy and dark, reflecting our mood during Holy Week.

These days inevitably bring so many childhood memories back. Memories of scents and unique flavours, happy moments, traditions, dyed red eggs and Easter bread, a brand new dress and white shoes –gifts from your godparents-, Easter candles, celebrating the Resurrection with big festive family gatherings, endless joy and happiness!

This year, Easter is nothing like we know it. It’s different, quiet, lonely and strange. A little child told me yesterday that it’s going to be boring. But since we’re all spending the holiday at home this time, perhaps we can see it as a chance to appreciate all the little things that we take for granted; all the hugs and kisses, the joy of being together, laughing and having fun. We all certainly want to have all of that back soon and simply return to our normal lives. Who would have thought that our sometimes boring daily routine could feel so precious?

Easter might feel strange and quiet this year, distanced and muted. But even though all churches will remain closed and bells won’t ring neither in grief nor in celebration of the coming of the Holy Fire, even though we won't get to be with our loved ones and our Easter table will look emptier than usual, it’s all right. Let’s keep all the things and the people we love in our thoughts and pray. And, why not, we should just allow ourselves to be proud of each and every one of us for being so strong during these difficult and challenging times.

 

Can’t think of a dessert that could be more suitable for the occasion than a delicious strawberry tiramisu, a recipe that I’ve shared with you before but since it’s always a good idea for a festive Easter table, I thought I’d remind you of it in case you’re in need of some dessert inspiration! Ingredients

Around 20 ladyfingers (depending on the size of your cake tin)

1 teacup strong, aromatic, cold coffee

2tbsp Amaretto liqueur

250g strawberries, cut in four pieces

250g mascarpone cheese

500g heavy cream

5tbsp sugar

Seeds from one vanilla bean

1tbsp cocoa powder

Method

1. Wash and cut the strawberries in four pieces. Leave them on kitchen paper to get rid of the extra liquids.

2. Add the cold coffee and amaretto liqueur to a bowl.

3. In a medium bowl, whisk the mascarpone cheese, heavy cream, sugar and vanilla seeds until you have a thick mixture. Transfer half of the mixture into a piping bag and keep the rest of it as it is. Leave both mixtures in the refrigerator until it’s time to use them.

4. Pick a narrow and long cake tin. Dip both sides of the ladyfingers in coffee for a few seconds and cover the tin base with a layer of them, using approximately half of your biscuits.

5. Cover the biscuits with half of the cream that you’ve kept in the bowl. Continue with adding the strawberries and spread them evenly on top of the cream layer. Add a second layer of ladyfingers. Leave the dessert in the refrigerator for at least two hours to set. When it’s ready, turn it upside down on a serving platter of your preference.

6. With a piping bag, form small, even swirls of cream on top of the surface of your dessert. Sprinkle some cocoa powder and your dessert is ready!
