Banana Bread Breakfast

As simple as it gets and perfect for our breakfast today! Since this is a not-too-sweet cake, it can be dressed up with any jam, honey, tahini or fruits..

Banana bread has to be the most popular and most photographed cake on pinterest at the moment! Up until now, I’d say I wasn't exactly a banana bread fan, for no particular reason. I love all the ingredients it contains including banana, of course. Perhaps it didn’t excite me enough and I couldn’t explain all the fuss about something that is neither bread nor cake. It also possibly has to do with the fact that I tend to avoid recipes that are so incredibly popular as I don’t really see what one extra version of the same thing would have to offer.

That being said, all serious bloggers have at least one banana bread recipe to present and, well, I hadn’t done that yet. So here I am!

 

In the meantime, I thought back on an amazing banana cake – quite similar to carrot cake- I used to make for my daughter, just like all mums who want to make a cake for their kids while trying to follow a relatively healthy diet. I definitely need to find that recipe.

So, what went wrong with my relationship with banana bread? This not-too-sweet cake-like bread would normally be exactly what my heart desires most of the times! I suppose I just hadn’t given it the attention it deserves!

Somehow, without really planning on it, I ended up with a recipe for this delicious sweet bread. Don’t ask me how, I didn’t expect it either. My girl has come to visit for a few days and, as it turns out, she’s a banana bread guru!

Every time we’re together, we like to join forces in the kitchen and have fun cooking and taking pictures of our creations. We share a mutual love for cooking, no doubt about it! “Mum, you’ve never made banana bread for the blog!” Her wish is my command, obviously!

So here it is! As simple as it gets and perfect for our breakfast today! Since this is a not-too-sweet cake, it can be dressed up with any jam, honey, tahini or fruits..

Making banana bread brought back so many happy memories of freshly baked cookies and cakes coming out of the oven and filling the air with appetising, irresistible warm smells.. I bet you know exactly what I’m talking about!

Ingredients

2 to 3 very ripe bananas

1/3 cup melted butter

1tsp baking soda

Pinch of salt

3/4 cup sugar (1/2 cup for a less sweet result, 1 cup for more sweet)

1 large egg, beaten

1tsp vanilla extract

1 1/2 cups all-purpose flour

Method

1. Preheat the oven to 175C and butter a loaf tin.

2. Use a fork to mash the bananas in a mixing bowl. When the mixture is smooth enough, add the melted butter and stir well.  

3. Add salt and baking soda, then blend in the sugar, beaten egg and vanilla. Add the flour.

4. Pour the mixture into the loaf tin and bake for 50 minutes to 1 hour at 175C. You can use a toothpick to determine whether it’s ready.

5. Remove the tin from the oven and let it cool down for a few minutes. Remove the banana bread from the loaf tin. Let it cool down completely. Ready to serve!
