What happens when biscuits and chocolate come together? Chocolate salami! That’s the first thing that comes to mind and for good reason! Chocolate salami is undeniably one of the most popular desserts for children or pretty much anyone really, regardless of age.

If that wasn’t the case, it wouldn’t be at the top of the list when it comes to desserts that all mums need to know how to make and keep in the freezer, just in case their child (or themselves) craves something sweet or for any other occasion in general.

Our favourite time for chocolate salami, at least in our home, has always been summer. Probably because it’s stored in the freezer, thus it feels a bit like ice cream with iced, crunchy, crackling biscuits. We never make just one. Summer means being outside with friends and children playing in the garden, so just one chocolate salami would never be enough!

I know you’re not used to me being so overly excited about anything chocolaty but chocolate salami is a very different story! Perhaps I’m more of a biscuit fan but in any case, combined with chocolate it’s just impossible to resist.

What’s also incredible about this dessert is that kids learn how to make it on their own very easily and at a very young age. Thus, sometimes you might come home from work to a big surprise, a little treasure hidden in the freezer! The signs are obviously noticeable; chocolate flavoured fingerprints and pieces of tin foil all over the place give you a pretty good idea of what happened in your absence!

My daughter and I cooked together a lot during the last days of quarantine. I love how she has evolved her own style and approach to cooking that doesn’t always coincide with mine. This might feel a bit uneasy or inconvenient at first but this feeling soon drifts away with the invigorating waves of fresh energy and new ideas that are always welcome in our kitchen! That’s exactly what happened with our chocolate salami recipe this time; it was renamed to chocolate rocks and tasted amazing!

The secret to this dessert’s success lies in the unbelievably crunchy Gran Cereale biscuits my daughter found. I’d describe them as something between a biscuit and meringue, in short, they’re just perfect! What’s also incredible about this dessert is that it consists of 3 ingredients and, guess what, none of them is sugar!

Delicious, crunchy, as sweet and bitter as they need to be and very refreshing.. Just make a generous quantity and freeze them, so that you have homemade, ready to serve chocolate rocks any time you need them! Ingredients

250g butter

250g 70% dark chocolate

1 packet of chocolate Gran Cereale biscuits

1tsp ground pepper

Method

1. Break the biscuits to 2 or 3 pieces each. Put them in a bowl.

2. Melt butter and chocolate over a bain marie and stir gently. Once the ingredients have melted, let the mixture cool down.

3. Add the biscuits and pepper (according to taste) to the mixture.

4. Pour the mixture onto a tray and put it in the freezer for at least 6 hours.

5. Remove the tray from the freezer and break the mixture to mini chocolate rocks using a sharp knife. Serve. If there are any left, you can store them in a food container and freeze them until next time.
